One Pot Spaghetti Bolognese
The best one pot recipes are those that you add the ingredients then just walk away and let the magic happen. That is exactly how to prepare this wonderful One Pot Spaghetti Bolognese Recipe. Add the beautiful ingredients, mix them all together, then let the flavors develop over a few hours in the pot. There is so little work involved, yet the flavors are immense
A classic Spaghetti Bolognese should be a staple recipe for any household. It’s always a favorite for adults and kids alike, and a great dish to serve family style at the table. Serve it alongside a fresh salad (perhaps some Arugula and shaved Parmesan?) and some crusty garlic bread and you’ve got a perfect, hearty dinner for a cold night
Creating the best Bolognese Sauce is all about building flavors
The key to making the best Tomato Sauce is all about building flavors. What we mean by this is to not simply dump all the ingredients into the pot at the same time. Instead, add ingredients one by one and let them cook to allow their natural flavors to build. This is particularly important when cooking vegetables
Vegetables contain quite a lot of water, which is typically not that flavorful. So, by adding the vegetables individually, then letting them cook, allows that water to evaporate. What you’re left with is the purest flavor of those vegetables. If you simply added all the ingredients at once then put the lid on, all that water will stay in the dish and the flavor won’t be anywhere near as good
So, while this is a simple dish to make it does require some patience. Allow each ingredient time to cook and concentrate the flavor before proceeding to the next step. We guarantee you’ll be rewarded with some brilliant flavors this way
For the best meat flavor, try a mix of half Beef, half Pork
In our version of Homemade Spaghetti Bolognese, we’re using ground meat. It’s a great choice for Bolognese as it has a ton of flavor in it. We love to use a mixture of Ground Beef and Ground Pork to create a beautiful Bolognese flavored Sauce. Ground Pork is naturally quite fatty so the flavor that you’ll get will be amazing. We recommend getting Ground Beef with a high fat percentage too (around 15 – 17% is great). This will ensure more flavor out of the Beef, and it will match well with the Pork
You’re also saving a lot of time when cooking ground meat instead of braising meat as you don’t need to spend hours breaking down the meat like you would if you’re using Short Ribs or Beef Chuck for example
Another good option is to try Spicy Italian Sausage Meat. That stuff is amazing in Bolognese Sauce! You can get ground beef, or simply the Sausages. Just remove the Sausage casing before you add to the dish so it will break up a lot easier in the sauce
As is the case for any time you’re in the kitchen, Red Wine is essential
It goes without saying that when you’re in the kitchen preparing food, Red Wine is essential. Perhaps not always to be used in the cooking, but a glass of Red Wine is a critical component of any good chefs repertoire!
The good news is for this dish you need to use some of that Red Wine in the recipe! Perhaps this may be bad news for some, as it means you’ll be drinking 1 ½ glasses less from that bottle, as we need it for the sauce!
Red Wine adds a beautiful richness to the sauce. As it cooks through and reduces, the alcohol burns off and the water content evaporates, leaving a delicious red wine reduction which flavors the One Pot Spaghetti Bolognese Sauce. It goes in before all the other liquids so you can burn off the alcohol easier, so you’ll need to crack that bottle of red early in the cooking process
Use a Red Wine you would drink for your One Pot Spaghetti Bolognese Sauce
As a rule of thumb when cooking with Red Wine, we always recommend using Red Wine that you yourself enjoy drinking. Just like any other ingredient in a recipe, there is levels to the quality of Red Wine, so it should be treated as such. Use a good quality Red Wine that you would typically drink yourself and enjoy. That way, you know you’ll enjoy the flavors that end up in the sauce
Using Wine you would drink yourself also makes sense given we only need 1 ½ cups. So, guess what you can do with the remaining wine left in the bottle? Drink it of course! Naturally, a wine that is used in cooking will pair very well with the food, so try and save a little for dinnertime if you can
You can use Canned Tomatoes, or a combination of Canned Tomatoes and Canned Pasta Sauce
This is really a personal preference on the kind of flavors you want to produce in your Bolognese Sauce. For our recipe, we’ve used a combination of Canned Tomatoes and Canned Pasta Sauce. The flavor came out amazing
The Canned Tomatoes will give you more of a fresh, Tomato flavor. Canned Pasta Sauce is more concentrated and is generally flavored with herbs. It is generally a little bit sweeter too, usually containing some Tomato Paste or Tomato Concentrate. We find that the combination of the two different Tomatoes gives a richer overall flavor. If you prefer a more subtle tasting Tomato Sauce, then just stick with the Canned Tomatoes
We highly recommend using San Marzano Tomatoes if you can. They’re simply the best type of Tomatoes to use in cooking Bolognese Sauces. They are readily available so you should not have too much difficulty finding them. Another great brand of sauce is Mutti. We did a cooking lesson years ago in Italy and the lady was using Mutti Sauce. Ever since then, we’ve been loyal to the brand – they produce some great quality sauces!

400g / 14 oz. Canned Pasta Sauce
1 cup Parmesan Cheese, freshly grated

Instructions
- Heat the Olive Oil in a large pot or Dutch Oven over medium heat. Once hot, add the Onions and Mushrooms and cook for 5 minutes until their juices have evaporated
- Add the Carrot, Celery, and 1 tsp. of Salt and cook for a further 5 minutes, stirring frequently. Once the vegetables are tender add the Red Wine and allow to reduce, another 4-5 minutes

- After two hours, remove the lid and continue to simmer for a further 45 minutes to reduce and thicken the sauce. Once the sauce has reduced to your desired consistency remove from heat and taste for seasoning
