Woks are fantastic pans for making Fried Rice and other dishes requiring super high heat. They conduct heat very well and allow you to cook dishes in minutes. For this recipe you’ll notice in the photos we didn’t use a Wok, instead we used the trust Cast Iron Pan. Honestly, a Wok, Cast Iron, or Regular Frying pan will do. So long as the pan you’re using conducts heat well, you’ll get a great result

We used the Cast Iron for the main reason that there is a lot of volume of food in this No Egg Fried Rice Dish! Even with the absence of Egg, there’s a lot of food! Our Cast Iron Pan is much larger than our regular Frying Pan, which is why we opted to use it

Simple Pantry Ingredients are all that’s needed to give the dish that authentic, Chinese Fried Rice flavor

We’re all about simple dishes here. You’ve likely got a lot of the ingredients already tucked away in your pantry to make the delicious sauce for this No Egg Fried Rice already. All you need is Soy Sauce, Chinese Vinegar, Ginger, and Garlic as the base for this beautiful sauce

We have added a few extra ingredients which we find really bring out the flavor in this dish. Those are Fish Sauce, and Sesame Oil. Both ingredients are very strong, so you only need to use them sparingly, but we assure you, then will transform the flavor of the dish.

Well worth picking up if you don’t already have them in your pantry. Trust us, they’ll get used in your cooking way more often once you’ve got them!

To make this No Egg Fried Rice dish 100% Vegan, simply omit the Chinese Sausage

Everything else in this recipe is 100% Vegan other than the Chinese Sausage. So, a simple solution is to omit the Sausage completely if you are looking for a Vegan meal. The meal will taste fantastic without it regardless

If you are looking for a Vegan substitute, some good alternatives are thickly sliced Mushrooms, or Tofu. For Mushrooms you can follow the below recipe exactly, just replace the Sausages with Mushrooms. If you’re using Tofu, add them at the very end right before serving so it maintains its shape

If you’re anything like us, you always cook too much Rice. I don’t know what it is exactly, but usually when a recipe calls for rice I cook 2 cups, thinking that’ll cover me. What I’m left is with mountains of leftover rice on almost every occasion, no matter how hungry I am!

The good news is this recipe is a fantastic way to make use of that leftover rice. In fact, it’s the preferred form of Rice to make Fried Rice from. Pre-cooked rice that has been refrigerated overnight is much firmer, so holds up exceptionally well to the high heat of a Fried Rice cook

If you were to use freshly cooked rice, it will be far too mushy and will literally break apart during the cooking process for the No Egg Fried Rice recipe. If you do not have any leftover Rice that is ok too. Simply pre-cook the rice a few hours earlier, let it cool and refrigerate. When it’s time to cook the Rice will serve the same purpose as if it was left overnight. Easy!

Add your favorite Vegetables, no need to be super picky with this recipe

This is one of my favorite parts of making Fried Rice. It is a very forgiving dish when it comes to vegetables. Add any vegetables you like, and it’ll still taste great! The only thing to consider is when to add the vegetables into the dish to ensure everything is cooked through evenly

Heartier, meatier vegetables such as Carrots, Celery, Leeks, Shredded Cabbage, etc. take a little more time to cook. So, add them in with the Onions at the start of the cooking process, and before you add Rice

Vegetables that require much less cooking time such as Snap Peas, Bell Peppers, and Bean Sprouts can be added after the rice, as they only require a few minutes (maximum) to cook through and remain lovely and crispy

If you absolutely must have Egg in your Fried Rice, it’s extremely easy to add to this dish

If you’re a stalwart for Egg in your Fried Rice we’ve got you covered. There are no fancy tricks involved at all when adding Egg to Fried Rice. Egg doesn’t take long to cook at all, especially when you’re cooking at high temperatures in Stir Fries and Fried Rice

All you need to do is crack 2-3 eggs in a separate bowl. Whisk them together then pour over the dish at the very end of the cooking. Stir them around for 30 seconds and it’ll be done. The beauty about Eggs is that they will continue to cook in a dish even after it’s been taken off the heat. So literally by the time you’re plating, the Eggs are cooked

Ingredients

  • 2 cups of pre-cooked, day-old Rice

  • 1 cup Chinese Sausage, sliced

  • 2 Carrots, diced

  • 2 Celery Storks, diced

  • ½ Red Onion, sliced

  • 4 Garlic Cloves, finely chopped

  • 1 tsp. Ginger, finely chopped

  • 1 Red Chili, deseeded and finely sliced

  • 1 cup Snap Peas, halved

  • 1 cup Scallions, finely chopped

  • 1 tbsp. Peanuts, roughly chopped

  • ½ cup Soy Sauce

  • ¼ cup Chinese Vinegar

  • 1 tbsp. Fish Sauce

  • ½ tsp. Sesame Oil

  • 1 tsp. Vegetable Oil

  • ½ tsp. Salt

Instructions

  • Add the Vegetable Oil to a large Wok or Frying Pan over high heat. Once hot, add the Red Onion and salt, and stir fry for 1 minute, then add the Chinese Sausage, Carrots and Celery
  • Cook the Meat and Vegetables for 2 minutes, stirring constantly then add the Garlic, Ginger, and Chili. Cook for 30 seconds until the Garlic and Ginger become fragrant, then add the Rice
  • Stir the Rice constantly to break it up as much as possible. After about 1 minute, add Soy Sauce, Chinese Vinegar, Fish Sauce, and Sesame Oil
  • Continue to stir constantly for about 2 minutes to get the rice fully coated in the sauce. Add the Snap Peas and cook for a further minute
  • Finally, add the Scallions and stir through until evenly distributed amongst the Fried Rice. Turn off the heat and finish with a garnish of Crushed Peanuts. Serve while hot
