One of our favorite Mexican dishes to make is this wonderful One Pan Chicken Fajitas Recipe. It’s a quick and easy dish that is not only super tasty, but light on the wallet too

Use Chicken Thighs over Chicken Breasts for the best Fajitas

Like many Chicken recipes that we make, we’re recommending that you stick with the Chicken Thighs for this dish. Chicken Thighs have more flavor than the Chicken Breast, due to their location on the Chicken being right next to the bone, which gives it more flavor

Chicken Thighs are a lot more forgiving during cooking too, as they tend to not try out as much as Chicken Breasts if you accidently overcook them by a few degrees. If you are making a large batch of our One Pan Chicken Fajitas to have leftovers for later, Thighs are also a great choice. They won’t dry out once cooked and refrigerated. So, reheating them the next day you’ll get that same level of beautiful tenderness and delicious flavor

This recipe brings the spice care of Chipotle Peppers and Cayenne Pepper!

One of our favorite ingredients to include in home cooked Mexican food are Chipotle Peppers. The best type for creating delicious marinades are those that come in a beautiful Adobo Sauce. They can be readily found in most grocery stores and will complete transform your cooking

The Chipotle Peppers in Adobo Sauce have a beautiful richness to them which elevates the flavor of the Chicken immensely. They also have a little bit of heat! Not too much, but definitely enough to make you sit up and notice

They also have a beautiful, subtle, smoky flavor to them which makes them totally unique. Sure, you could roast your own Peppers over the flame. Then peel them, slice them up and add them to the Dish. But why not just use these ones out of a jar? They’re just as good!

We add 1 tsp. of Cayenne Pepper to the Chicken Marinade to add a little bit more fire to the dish. Cayenne Pepper is a great ingredient to add to marinades. It’s spicy, but not overpoweringly so. It’ll give the Chicken a lovely hit of spice while still balancing out all of those other delicious ingredients added to the marinade

If you don’t like your food too spicy, then we’d recommend excluding the Marinade. If people want more spice in their Fajitas you can serve them some hot sauce on the table which they can add themselves. That way everyone will be happy!

There are a lot of recipes to make One Pan Chicken Fajitas in a Sheet Pan. This recipe uses the classic Frying Pan instead!

This One Pot Recipe relies on the classic method. The original One Pot – the Frying Pan! We’ve seen a lot of recipes out there using a Sheet Pan however we believe you get a much better flavor and texture for Fajitas if you cook them in the frying pan

The high heat allows you to seer off the Chicken to get that beautiful char-like taste, which is such a critical element when it comes to Fajitas. Isn’t it always more exciting when you’re Fajitas arrive at your favorite Mexican Restaurant and they’re sizzling like crazy on a hot plate? The whole restaurant looks up with envy and those ‘I wish I had ordered that’ looks are shot your way. That’s what cooking your One Pan Chicken Fajitas on the frying pan achieves! No Sheet Pan for us thank you!

It is also a much quicker cooking time. Roasting dishes in the oven can sometimes be a bit of a pain. You’ve got to wait for the oven to come up to heat. Then, it’s a slow cooking process to get the best results. Don’t get us wrong, we love our Sheet Pan cooking in the Oven. We’ve got a whole dedicated Sheet Pan section. However, when it comes to Fajitas. You’ll get a better result, faster, by pan frying them on a high heat

Marinade the Chicken in a Ziploc bag to seal in as much flavor as possible

This is a nice little trick that we’ve adopted when marinating meat. Buy a bunch of large Ziploc bags (or any other type of sealable bag) and place your Chicken in there alongside the marinade. You can zip it up then massage the marinade thoroughly into the Chicken. This will ensure an even coating throughout. Then simply throw it into the refrigerator to soak up all those flavors

The beauty about the Ziploc bags is there’s nowhere for the flavor to hide. It has no choice but to seep deep into the Chicken, maximizing it’s flavor and tenderness. Also, there’s so much less mess involved. You’re not having to clean up a bunch of marinade that’s gone everywhere while mixing it with the Chicken. Simply discard the bag when you’re done!

Fajitas are always a fun, interactive experience in restaurants. Getting that lovely side plate with toasty-hot Tortillas ready to be inundated with delicious flavors is such a treat! Having a bunch of fun sides to personalize your Fajitas is great too!

So why not make a couple of easy side dishes to pair alongside your Fajitas so the family can dive into creating their own unique Fajitas. A couple of classics are some simple shredded cheese (you can’t go past Cheddar to be honest). Maybe a bowl of Sour Cream to help cool off some of the spiciness in this dish. Ingredients

  • 1 ½ – 2 lbs. Chicken Thighs, cut into bite sized pieces

  • 1 tbsp. Chipotle in Adobo Sauce

  • 1 tsp. Ground Cumin

  • 1 tsp. Ground Coriander Seeds

  • 1 tsp. Cayenne Pepper

  • 1 tsp. Smoked Paprika

  • 1 Bell Pepper, cut into bite sized pieces

  • ½ Red Onion, roughly diced

  • 4 Garlic Cloves, finely chopped

  • 2 Limes

  • Juice of 1 Lemon

  • ½ cup Parsley, roughly chopped

  • 1 cup grated Cheddar Cheese

  • 4 large Tortillas

  • 1 tsp. Vegetable Oil

  • Salt

Instructions

  • We begin this recipe by making the marinade for the Chicken. Combine the Chipotle in Adobo Sauce, Cumin, Coriander Seeds, Cayenne Pepper, Paprika, Lemon Juice, and 2 tsp. of Salt in a Ziploc bag. Mix well to combine then add the Chicken
  • Massage the Chicken into the marinade so every piece is evenly coated, then refrigerate for at least 2 hours, preferably overnight
  • When you are ready to cook, remove the Chicken from the refrigerator for 1 hour before serving to bring it up to room temperature
  • Heat the Oil In a large frying pan on high heat. Once hot add the Onions. Cook for 3-4 minutes then add the Garlic and cook for 1 more minute
  • Add the Chicken and cook for about 5 minutes, stirring occasionally. Add the Bell Peppers and cook for a further 2 minutes until the Chicken has been completely cooked (internal temperature of 160F)
  • Finish by mixing in the chopped Parsley and place some Lime wedges around the pan. Serve the pan family style in the middle of the table with the Tortillas and shredded Cheese on the side for people to make their own Spicy Chicken Fajitas

Notes

  • For optimal results, marinade your Chicken overnight
