Perhaps the most popular one pot meals going is the classic Sunday Roast. This unbelievably delicious dish is not only a tradition in many parts of the world (particularly the UK), but it’s mandatory! Enjoying a beautiful Sunday Roast Lamb with Vegetables with family and friends is one of the most quintessential British dining experiences you can enjoy. Perhaps what makes this dish so special is more than simply the delicious food, but the experience of enjoying it with those who are closest to you. In this recipe we’ll show you how to make a no fuss, super-simple and delicious Sunday Roast Lamb in just one pot!

As with all of the recipes on One Pot Dinners, this Roast Lamb dish is so simply to make. I think that’s one of the major drawcards with a Sunday Roast, and why it has been so popular for a big family meal for centuries now. It requires very little effort and attention, allowing for more time to spend with your loved ones

For our recipe we are using a beautiful cut of Lamb Leg. You can replace the Lamb with Chicken or Beef if you prefer, just try to ensure that the weight remains about the same. We used a Lamb Leg which was about 3 lbs. and took just about 1 hour to cook perfectly in the oven at 400F. If you’re using a heavier cut of meat it’ll take longer, lighters, less time naturally

Lamb is the traditional cut of meat that has been served in traditional Sunday Roast dishes across the UK for centuries and is such a much-loved protein in that part of the world. I was surprised when I found out that Lamb is not as popular in the US as the UK, and many Americans consider it to sometimes have too much of a rich or ‘gamey’ flavor

Growing up eating Roast Lamb dinners every Sunday for years I never associated Roast Lamb with being gamey. I just consider it to be a typical cut of meat in the same vein as Pork, Chicken, or Beef. Even if you’ve not eaten a lot of Lamb, I highly encourage you to give this dish a try

How to make the perfect Sunday Roast Lamb with Vegetables

As mentioned earlier, the simplicity of this recipe is something to behold. All you need to do is prepare the Vegetables by peeling them and cutting them into decent chunk-sized pieces. We’ve opted for the classic combination of Roast Potatoes, Pumpkin, and Onions. This classic combination of Veggies is welcome at any Roast Dinner we’re a part of

Once the Veggies are prepared it’s time for the Lamb. No need for anything fancy, just give it a good seasoning. Then place it onto a bed of Rosemary in the middle of a roasting pan. Rosemary adds a beautiful flavor and aroma and is a perfect herb to pair with Lamb

Scatter the Vegetables all around the Lamb. If the pan gets too crowded you can always add them to a separate pan. Give the vegetables a decent seasoning of Salt along with some Olive Oil. Toss them around so the Oil is well coated and then into the oven it goes

Roasting the Lamb and Veggies

For the best result we recommend turning the Vegetables about halfway through the cook (which will be around the 30-minute mark). This will help them to cook evenly and ensure that all sides of the Vegetables form a beautiful crust on the outside

Once the Lamb hits an internal temperature of around 135F it’s time to remove it from the Oven and allow it to rest for 10 – 15 minutes. While resting the Lamb will continue to cook on the inside, so that internal temperature will increase to around the 140 – 145F mark – perfect for cooked Lamb

Then, it’s simply a matter of plating and serving. One expectation of a Roast Dinner is it will be ample. So, be sure to load up those plates with as much yummy goodness as possible. This recipe will easily feed 4 people, with ample room for leftovers

Ingredients

  • 3 lb. Lamb Leg

  • 3 Potatoes, peeled and cut into pieces

  • ½ Pumpkin, peeled and cut into pieces

  • 2 Onions, peeled and cut into pieces

  • 4 Sprigs of Rosemary

  • 2 tbsp. Olive Oil

  • Salt

Instructions

  • Remove the Lamb from the refrigerator and leave it out at room temperature. We recommend leaving it for at least 2 hours before cooking
  • Season the Lamb leg well with Salt and then place in the middle of a large baking pan. Sit the Lamb on top of the Rosemary in the pan
  • Prepare the Vegetables and then scatter them around the pan. If required you can use another pan to ensure they will all fit. Season the Vegetables with 1 tbsp. of Salt and 2 tbsp. Olive Oil and mix well to coat
  • Place the pan in the middle of an oven pre-heated to 400F and roast for approximately 1 hour, until the internal temperature of the Lamb reads 135F
  • Remove from the oven and allow the Lamb to rest for 10 minutes before carving. You can keep the Vegetables in the Oven (turn off the heat) to keep them warm while the Lamb is resting

Notes

  • We recommend using a meat thermometer to accurately track the internal temperature of the Lamb
  • Remember to save any leftovers as they will make for great Lamb sandwiches the next day!

Of course, the best way to enjoy your Sunday Roast Lamb with Vegetables is with some good quality Gravy. We cut a corner when making this dish and just bought some Gravy from the store. If you can find some good quality Gravy from the store then absolutely go for it! Otherwise, you can make some yourself by adding a bit of flour to the pan with all the Lamb Juices. Heat it up while stirring constantly with a wooden spoon until a thick Gravy forms then enjoy!
